Tomatensoep met basilicum-room
Totale bereidingstijd: 35–40 minuten
voor 6 porties
Ingrediënten
200 g wortels, geschild, gevierendeeld
1 ui, in blokjes
10 g boter
1 blik tomaten (850 g)
Zout
Peper
250 ml groentebouillon
½theelepel suiker
4 eetlepels basilicum, gehakt
100 ml room
Bereiding
Doe de wortels, de ui en de boter in een
schaal en stoof het geheel afgedekt ge-
durende ca.8 minuten met een vermo-
gen van 850Watt.
Voeg de tomaten met het vocht, het
zout, de peper, de bouillon en de suiker
toe en bereid de soep afgedekt met
450Watt gedurende ca.6 minuten. Pu-
reer de soep. Als de soep te smeuïg
wordt, kunt u nog wat water of bouillon
toevoegen.
Pureer het basilicum in de room en klop
de room daarbij half stijf. Doe de soep
in borden of kommen. Doe op elke por-
tie een kleine hoeveelheid basilicum-
room. Decoreer de soep met basilicum-
blaadjes.
