Yeast pretzels
Makes 8 pretzels
Ingredients:
250 g strong white bread flour
1 tsp sugar
1 tsp salt
40 g butter
20 g fresh yeast
1 egg
125 ml lukewarm milk
To glaze:
1 egg yolk
1 tbsp milk
To decorate:
Poppy seeds or grated cheese
For the steam: Approx. 150 ml water
Method:
1. Mix together the flour, sugar,
crumbled yeast, salt, butter, eggs and
lukewarm milk and knead to a
malleable dough. Place in the oven to
prove for 20-30 minutes at 35 °C on
Conventional heat.
2. Form into 8 pretzels, place on a
baking tray. Place in the oven to prove
for a further 10 minutes at 35 °C on
Conventional heat.
3. Beat together the egg yolk and milk,
brush over the pretzels, and scatter
them with poppy seeds or grated
cheese. Bake until golden.

Baking duration: 25–35 minutes
