Lamsschenkel in
sinaasappelsaus
Programmaduur: 129-171 minuten
Ingrediënten voor 6 personen
6 lamsschenkels (à 250-300 g)
zout
peper
2 plakken bacon
1ui
3 eetlepels tomatenpuree
1 theelepel kaneel
2 theelepels gemalen komijn
6 hele kruidnagels
4 grote knoflooktenen
250 ml rode wijn
100 ml rundvleesvocht
600 ml kippenbouillon
geraspte schil van 2 sinaasappels
1 takje rozemarijn
1. Doe de lamsschenkels in de braad-
pan en breng deze op smaak met zout
en peper. Snijd het bacon in blokjes,
schil de knoflooktenen en doe deze met
de overige ingrediënten in de braadpan
en bereid de inhoud. Draai het vlees
halverwege de bereidingstijd een keer
om.
2. Haal de braadpan uit de oven, ver
-
wijder het vlees en doe dat op een
groot bord. Houd het vlees warm.
Breng het vocht op de kookplaat
lichtjes aan de kook. Verwijder het vet
en de vaste bestanddelen. Pers de
knoflooktenen uit. Doe de knoflook in
de saus. Kook de saus totdat deze
indikt. Voeg zout en peper toe. Voeg
het vlees toe. Giet de saus over het
vlees en serveer het.
