Filet in bladerdeeg
Baktijd ca. 40 minuten
Ingrediënten voor 4 personen:
1 varkensfilet van 400 g
Zout
Peper
1 eetlepel boterolie
1 pakje rond bladerdeeg
4 sneden gekookte ham
Vulling:
1 kleine wortel
1 kleine courgette
200 g kalfsgehakt
4 eetlepels room
60 g tilsitkaas in blokjes
4 blaadjes salie
Zout
Peper
Om te bestrijken:
1 eierdooiers
1 snuifje zout
1 theelepel blikjesmelk
Bereiding:
1. Vlees met zout en peper kruiden en
langs alle zijden afbakken in een pan
met boterolie.
2. Wortel schillen, in kleine blokjes
snijden, courgette eveneens in kleine
blokjes snijden. Beide in telkens 1
stoomovenpan met gaten leggen en
gedurende 2 minuten bij 100 °C koken.
Laten afkoelen.
3. Kalfsgehakt met de groenten ver
-
mengen, room en tilsitkaas toevoegen.
4. Salie fijnsnijden en met zout en
peper bij het mengsel doen.
5. Deeg op het werkblad leggen, ham
erop leggen, vulling gelijkmatig erover
uitstrijken en het vlees erop leggen.
6. Bladerdeeg oprollen en met de naad
langs onder op een ingevette bakplaat
leggen.
7. Eierdooier met zout en blikjesmelk
roeren, hiermee het bladerdeeg insme
-
ren en bakken.
