Voorbereiding: 30 min
Stoomtijd: 35-40 min op 100°
Voor 4 personen
1 kalfsrollade van 800 g
300 g paddenstoelen (bij
voorkeur eekhoorntjesbrood)
4 kleine aubergines
1 citroen
4 eetl. fijngehakte kervel
30 cl kalfsfond
100 g boter
Grof zeezout
De rollade goed inzouten en 10 min. laten rusten.
Doe het water in het reservoir van de stoomkoker,
leg de rollade in een stoomschaal, leg het deksel
erop en laat 35-40 min. stomen. Was de aubergines.
Snijd ze in de lengte doormidden, verwijder de
uiteinden en snijd ze in dunne schijven. Was de
aubergineschijven en droog ze zorgvuldig af.
Leg ze in de andere stoomschaal. Spoel de
paddenstoelen snel af, dep ze droog en snijd ze in
dunne plakjes.
Na 10 min. stomen de aubergines aan de rollade
toevoegen en nog 5 min. later de paddenstoelen.
Laten uitlekken.
Maak de saus: in een pannetje de kalfsfond 5 min.
op laag vuur verwarmen en onder zachtjes roeren
het sap van een ½ citroen toevoegen. Al roerend
de in blokjes gesneden boter toevoegen. Op smaak
maken met eventueel het sap van de andere helft
van de citroen.
Houd de saus warm.
De rollade in dunne plakken snijden, de groenten
er omheen schikken, de saus erover gieten en met
kervel garneren. Warm opdienen.
