Voor 4 personen
800 g ossenhaas met
vetspek omwikkeld en
vastgebonden
8 wortels
8 vastkokende kleine
aardappels: Roseval, Ratte,
Charlotte, B.F. 15...
4 bleekselderijstengels
4 uien
2 preiwitten
½ bloemkooltje
1 l runderbouillon van 2
bouillonblokken
Saus
20 cl olie
1 eierdooier
1 eetl. mosterd
Zout, peper
6 augurken
18 kappertjes
1 eetl. citroensap
Doe de bouillon in het reservoir van de stoomkoker.
Leg de rollade in de stoomschaal. Leg het deksel
erop en laat 20 à 30 min. stomen, afhankelijk van
de grootte van de rollade.
Alle groenten wassen, schillen en in stukken
snijden, behalve de aardappels, die u heel laat.
Leg alle groenten in een stoomschaal en plaats
deze 10 min. na het begin van de stoomtijd
bovenop de schaal met het vlees.
Na het verstrijken van de bereidingstijd laten
uitlekken.
Maak de saus: De kappertjes en augurken
fijnhakken. De eierdooier vermengen met de
mosterd, zout, peper en 1 eetlepel olie. De rest van
de olie onder voortdurend kloppen in een dun
straaltje toevoegen, totdat u een homogene massa
heeft. Tot slot de gehakte kappertjes en augurken
toevoegen evenals het citroensap.
Warm opdienen en de saus er apart bijgeven.
U kunt de rollade even in de braadpan aanbraden,
voordat u hem verder gaar stoomt.
