Voorbereiding: 20 min
Stoomtijd: 15-20 min op 100° / 20-25 min op 80°*

Voor 4 personen
800 g gerookte schelvis
3 komkommers
1 eetl. gehakte kervel
150 g bladspinazie
Saus
30 g boter
150 g crème fraîche
4 of 5 eetl. kappertjes
Zout, peper
Laat de gerookte schelvis 1 uur in de melk weken.
Was de komkommers, snijd de uiteinden eraf, schil
ze en verwijder de zaadlijsten met de pitjes. Snijd
de komkommers in schijfjes. Was de spinazie en
bekleed er de stoomschalen van de stoomkoker
mee, waarbij u openingen laat zodat de stoom kan
circuleren. Doe een liter water in het reservoir van
de stoomkoker. Leg de gerookte schelvis op de
spinazie in de schalen van de stoomkoker, leg het
deksel erop en laat gedurende de hierboven
opgegeven tijd stomen. Laten uitlekken.
Maak de saus: laat een klontje boter smelten in een
steelpannetje, voeg de crème fraîche en de
kappertjes toe. Licht met zout en peper bestrooien.
Zodra het aan de kook komt van het vuur afnemen.
De vis en de komkommer met saus overgieten en
goed warm opdienen.
