1. Preheat the oven to 200°C.
2. Prepare the end of each Brussels sprout, then cut them in half from top to
bottom.
3. Heat the oil in the frying pan over a medium heat.
4. As soon as the oil is hot, place the Brussels sprouts in the pan, with the cut side
facing down. Put the garlic in the pan, sprinkle with the salt and ground pepper,
and add the thyme.
5. Fry until the undersides of the sprouts are golden brown.
6. Add the bacon, and put the frying pan in the oven.
7. Roast at 200°C until the Brussels sprouts are brown and tender (15–18
minutes). Shake the pan every 5 minutes. When done, prick the insides of
some of the sprout with the tip of a paring knife to check that they are tender.
8. Add the balsamic vinegar and lemon juice, and stir to moisten the sprouts.
9. Remove the thyme sprigs and season with salt and pepper to taste. Serve hot
or warm.

6 tbsp extra virgin olive oil (or bacon
drippings)
8 garlic cloves, peeled and crushed
½ tsp coarse salt
¼ tsp ground black pepper
6 sprigs of thyme
8 slices of thick-cut bacon, cooked and
cut into bite-sized pieces
1/3 cup balsamic vinegar
5 tbsp freshly squeezed lemon juice
