Pparation
1. Mettre tous les ingrédients de la sauce dans un bol et réserver.
2. Faire chauffer l'huile à feu vif dans la poêle et y saisir l'ail jusqu'à ce qu'il ait pris une
couleur brun clair.
3. Ajouter les œufs et mélanger légèrement jusqu'à ce qu'ils soient toujours juste cuits
(1 min. environ).
4. Ajouter le tofu et l'oignon et mélanger sans cesse jusqu'à ce que le tout soit à moitié
cuit (1 min. environ).
5. Ajouter les nouilles fraîches, la sauce, les tomates et le basilic et faire sauter dans
la poêle pendant 3 min. environ pour tout bien mélanger.Laisser sur le feu jusqu'à
ce que les nouilles soient cuites et bien recouvertes du mélange et que les bords
soient croustillants.
6. Déglacer avec le vin de riz.Laisser cuire encore une minute et servir chaud.
Pour 2 à 4 personnes
Ingrédients
SAUCE
2 cuillères à soupe de sauce soja sucrée
1 cuillère à soupe de sauce d'huitre
1 cuillère à soupe ½ de sauce de poisson
1 cuillère à soupe de sucre
1 cuillère à café de sauce Siracha
1 cuillère à café d'ail haché finement
6 à 8 feuilles de basilic thaï en tranches
grossières
3 cuillères à soupe d'huile de colza ou d'arachide
2 à 3 gousses d'ail finement hachées
2 œufs
5 blocs de tofu extra ferme découpés en dés de
1 cm
½ oignon blanc moyen coupé en tranches
4 tasses de nouilles de riz fraîches séparées
½ tasse de tomates cerises coupées en deux
1 tasse de feuilles de basilic thaï emballées en
vrac
¼ de vin de riz chinois
