Groene speltbrood met schapenkaas
»lekker zelfs zonder bovenlaag«
Ingrediënten:
150 g wortelen
100 g schapenkaas
1 el. olijfolie
40 g verse gist
1 snuie suiker
1/2 tl. zout
250 ml warme botermelk
400 g volkorenbloem
100 g groene speltbloem
125 g gemalen noten
3 tl. gemalen koriander
2 tl. tijm
1 lepel rozemarijn
Tafelgerei:
Bereiding:
1. Was, reinig en rasp de wortelen fijn. Plet de schapenkaas
met olijfolie en verwarm zachtjes.
} Magnetron medium vermogen, circa 30 sec.
2. Los de gist in botermelk op. Doe alle ingrediënten in een
mengkom en kneed met een handmixer totdat het deeg niet
langer aan de rand van de kom kleeft.
3. Dek het deeg met een doek af en bewaar circa 30 min. in
een warme ruimte.
4. Vorm een brood, besprenkel met olijfolie en tijm. Plaats in
het apparaat en bak.
} 180 - 190 °C 60 - 90 min. of
} 180 °C op magnetron medium vermogen, 35 - 40 min.

Tomaten- en champignonquiche
»Vegetarisch«
Ingrediënten:
275 g verse bladerdeeg
4 vleestomaten
100 g champignons
2 eieren
200 g zure room
1 snuie cayennepeper
1 snuie peper
1 snuie nootmuskaat
1 snuie zout
Verse kruiden
75 g geraspte kaas
Tafelgerei:
Bereiding:
1. Leg het bladerdeeg op een ovenschaal die met bakpapier
is bedekt en maak een iets hogere rand met het deeg.
2. Was de tomaten, snij in schijven, schil de champignons,
snij ze in dunne schijven en bestrooi ze vervolgens over het
deeg.
3. Meng de eieren, zure room, specerijen en gehakte kruiden.
Giet de tomaten erover, bestrooi met kaas en bak.
} 180 - 190 °C 50 - 55 min. of
} 180 °C op magnetron medium vermogen, 25 - 35 min.
4. Dien warm of koud op.
