Curry de zanahorias y tofu

Este curry suave tiene un sabor de zanahorias frescas y un toque picante y especiado. Sírvalo con
tofu o tiras de pollo, arroz, brotes de soya y bok choy (repollo chino) pequeño para formar una
comida sustanciosa.
Tiempo total: 30 minutos
1 libra (450 g) de zanahorias frescas
2 camotes medianos (aproximadamente
3/4 de libra [340 g]), pelados
1 pieza de jengibre fresco de 1 pulgada
(2,5 cm)
1 diente de ajo
1 manzana sin semillas
2 cucharaditas de aceite de oliva
1 cucharada de pasta de curry rojo tailandés
3 tazas de caldo de verduras
1 taza de leche de coco descremada
1 cucharada de jugo de lima
1 cucharada de salsa de soya
1 libra (450 g) de tofu cortado en cubos
Platos principales
Introduzca las zanahorias y camotes a través del
ltro de pulpa ligera, seguidos del jengibre, el ajo
y la manzana. Debe obtener aproximadamente 1
taza de líquido.
Caliente el aceite de oliva en una sartén a fuego
medio. Agregue la pasta de curry y revuelva hasta
que suelte aroma, aproximadamente 1 minuto.
Agregue la mezcla del jugo de zanahorias y el caldo
de verduras y lleve a hervor a fuego lento. Vierta
la leche de coco, el jugo de lima y la salsa de soya
