Kamado Genius Guide by Grill Guru

TOP CAP
Some Grill Guru have a Top Cap made of cast
iron. Not only does it look beautiful and robust,
it is also a solid precision instrument. Provided
you pay a little attention to it. Cast iron has to be
“baked in” when put to use. This is also called
“seasoning”. A good bake in ensures that your
Top Cap will continue to move smoothly. Baking
in ensures that oil binds with the cast iron and
forms a protective hard polymer layer. This layer
protects the cast iron from weather, wind and
temperature dierences. In addition, it allows
the two parts to t together better, so that the
Top Cap can optimally do what it is intended
to do; regulate or shut o air circulation.
The best oil to use for “seasoning” the Top
Cap with is raw linseed oil (also called linseed
oil or ax seed oil). Other oils and fats do
not work as well. You can also use the Grill
Guru Cast Iron Spray. Do not use olive oil,
as this can turn the cast iron green.
Below, we explain step-by-step
how to season the Top Cap:
STEP 1: WASHING AND DRYING
Wash thoroughly with hot water in which
a good dash of vinegar has been added.
Rinse with hot water and dry well.
STEP 2: GREASING
Apply oil generously and rub in well.
Rub the oil out with a cloth so that
a very thin layer remains.
STEP 3: FRYING
Start at a temperature of around 200
degrees Celsius in a barbecue or oven.
Bake the cast iron for one hour.
Leave to cool for 20 minutes.
STEP 4: APPLYING LAYERS
Repeat steps 2 and 3 for 6 layers.
At each step, increase the temperature a
little to 260 degrees Celsius at the last step.
STEP 5: CALIBRATE TOP VENTILATION
Take some of the nest grit from the bottom
of a bag of charcoal and mix it with the
linseed oil to form a yoghurt-like paste.
Apply this to the parts touching each other.
STEP 6: BAKE ONE MORE TIME
Bake for another hour at 260 degrees Celsius
and allow to cool down completely. Now
the two parts should t together almost
seamlessly. If not, repeat steps 5 and 6.
Rub a little oil into the cast iron
after each use or cleaning.
