Crema de sopa de verduras
250 g patatas Lave y pele las patatas, las zanahorias, el apio y la
cebolla y
trocéelos. Añada las verduras cortadas a 1/3
del caldo de carne
y lleve a ebullición. Cueza durante
10 minutos.
Deje que las verduras y el caldo se enfríen, poste-
riormente
bata finamente a la velocidad 2 de la bati-
dora. Ponga a hervir
el resto del caldo de carne en
una cazuela, añada el puré de verduras y haga her-
vir de nuevo.
Sazone al gusto con la crème fraîche, la sal y la
pimienta
Espolvoree con las hierbas picadas y sirva.
125 g zanahorias
100 g apio
1 cebolla
1l caldo de carne
1taza
crème fraîche o
nata
1 cucha-
rada
hierbas picadas
sal, pimienta
Sopa de tomate fría
750 g tomates Corte los tomates en diagonal y escalde con agua
caliente. Pele los tomates y corte en trozos grandes.
Pele y trocee las cebollas.
Ponga los tomates y la cebolla en la batidora y mezcle
hasta
lograr un puré fino a la velocidad 2.
Añada el zumo de limón, el aceite y el vinagre.
Sazone al gusto con la sal, la pimienta y el azúcar.
Añada la crème fraîche.

Crema de sopa de zanahorias
500 g zanahorias
Lave y pele las zanahorias y trocéelas. Cueza en 1/4 l
de caldo
de verduras durante unos 15 minutos. Deje
enfriar un rato. Mezcle a la velocidad 2 de la bati-
dora y vuelva a poner en la cazuela. Añada el resto
del caldo y vuelva a calentar la sopa. Añada el vino
blanco y la nata al gusto.
