Pain Ciabatta
1. Préparez le levain la veille (voir recette page 94).
2. Versez les ingrédients dans le moule de pétrissage (dans
lequel se trouve déjà le levain) dans l’ordre indiqué dans
la recette.
3. À l’aide d’une cuillère mélangez les ingrédients pendant
quelques secondes.
4. Placez le moule de pétrissage dans le four et sélectionnez
le programme SE 2.
5. Appuyez sur la touche START/STOP.
6. À la n du pétrissage (25 minutes environ) le four émet
unsignalsonoreetsemetenpause.Letempsachécli-
gnote; retirez la pâte du moule de pétrissage, formez une
boule et mettez-la dans un plat huilé. Remettez le plat au
four et appuyez sur la touche START/STOP.
7. À la n du deuxième levage (40 minutes environ) le four
se met de nouveau en pause: sortez le plat du four et
appuyez sur la touche START/STOP (le four commence
la phase de préchauage). Versez la pâte sur un plan de
travail fariné, farinez la (la pâte est pleine d’eau donc très
collante) et formez un carré de 3 cm de hauteur.
Divisez la pâte à l’aide d’une spatule coupante et placez le
pain dans la lèchefrite tapissée de papier cuisson.
8. Mettez la lèchefrite dans le four sur la grille placée dans la
glissière inférieure et appuyez sur START/STOP.
9. Lorsque la première fournée est terminée, enfournez
la deuxième, programmez 20 minutes et appuyez sur
START/STOP (et ainsi de suite jusqu’à ce que tous les pains
soient cuits).
