Guacamole
Esta especialidad mejicana es ideal para servir con chips de maíz o
vegetales crudos. También puede acompañar pollo o pescado asado.
Rinde aproximadamente 1 taza (235 ml)
1 diente de ajo pequeño
½ jalapeño pequeño, en cuartos
¼ taza (40 g) de tomates de pera
1 aguacate maduro, partido a la mitad
1 cucharada de jugo de lima/limón verde fresco
½ cucharadita de sal kosher
1. Colocar el ajo y el jalapeño en el bol. Procesar a velocidad 5 durante
5 segundos para picar. Agregar los tomates; pulsar 2–3 veces para
picar. Agregar los ingredientes y pulsar, usando la velocidad 5, hasta
conseguirla consistencia deseada.
2. Probar y ajustar la sazón al gusto.

Humus
Puede cambiar esta receta básica, añadiéndole pimiento rojo cocido,
remolacha asada o hierbas frescas. Este humus es delicioso así, pero
también puede servir de base para preparar muchas variaciones incluso
humus de pimiento asado o humus con hierbas frescas.
Rinde aproximadamente 2 tazas (475 ml)
1 diente de ajo
1 lata de 15.5 onzas (425 g) de garbanzos, escurridos y lavados
½ taza (120 ml) de salsa Tahini
2 cucharadas de jugo de limón fresco
¾ cucharadita de sal kosher, o a gusto
1 pizca de comino en polvo
½ taza (120 ml) de agua (usar más si es necesario)
1. Poner el ajo en el bol del accesorio picador/moledor y procesar
a velocidad 5 durante 10–15 segundos; raspar el bol. Agregar los
ingredientes restantes y procesar durante 40–60 segundos, hasta
obtener una mezcla suave.
2. Probar y ajustar la sazón al gusto. Si desea que el humus sea menos
espeso, agregar un poco más de agua o aceite de oliva para un sabor
más rico.
