1. Engrasar levemente un molde redondo de 9 pulgadas (22 cm) con spray
vegetal. Reservar. Poner la rejilla del horno en el centro del horno y
precalentar el horno a 375°F (190°C).
2. Colocar el queso en el bol. Procesar a velocidad 5 por 20–30 segundos
para picar. Agregar el ajo y el chalote; procesar a velocidad 5 durante
20 segundos para picar.
3. Colocar la mezcla y el resto de los ingredientes en un tazón mediano.
Licuar a velocidad 5, usando el accesorio licuador. Licuar por
1–1½ minuto, usando un movimiento suave hacia arriba y abajo,
cerciorándose de cortar todos los ingredientes.

o pan crujiente.
Rinde aproximadamente 1½ taza (355 ml)
1 diente de ajo
3 cucharadas de perejil fresco picado
taza (300 g) de aceitunas negras (por ej. Kalamata o Niçoises)
deshuesadas
¼ taza (35 g) de alcaparras, escurridas y lavadas
2 cucharadas de aceite de oliva virgen extra
cucharadita de jugo de limón fresco
cucharadita de mostaza de Dijon
½ cucharadita de pimienta negra recién molida
1. Colocar el ajo y el perejil en el bol. Procesar a velocidad 5 durante
aproximadamente 20 segundos para picar grueso. Raspar el bol.
Agregar las aceitunas y las alcaparras; procesar a velocidad 5 por 20
segundos adicionales. Agregar el resto de los ingredientes; Procesar
hasta obtener la consistencia deseada. La "tapenade" es tan deliciosa
suave o con pedazos.
