Würstchen auf Porree
(für einen Dampfkorb)
Zutaten für 4 Portionen
800 g Porree
16 kleine Partywürstchen
1 Sträußchen Petersilie zum Garnieren
Für die Sauce:
3 El saure Sahne
Salz
Flüssigkeitsmenge im Bodengefäß:
maximale Füllstandsmarkierung

Porree putzen, die grünen Blätter ab -
schneiden und nur die weißen bis hellgrü-
nen Stangen verwenden. In 3-4 cm lan ge
Stücke schneiden. Eine Trennwand in den
Dampfkorb einsetzen (2:1). Den Porree in
die größere Kammer des Dampfkorbs
geben und 15 Minuten garen.

Die Würstchen mit einer Gabel mehr-
fach anstechen und in die kleinere Kammer
legen. Zusammen weitere 6 Minuten garen.
3.
Petersilie fein hacken.
4.
Für die Sauce etwas Gemüsefond aus
der Auffangschale mit der sauren Sahne
vermischen, bei Bedarf mit etwas Salz
abschmecken.
5.
Auf einer vorgewärmten Platte Würst -
chen auf den Porree anrichten und mit der
gehackten Petersilie bestreuen. Die Sauce
dazu reichen.
Salsiccette con porri
(con una vaschetta di cottura)
(per 4 persone)
800 g di porri
16 würstel mignon
1 mazzetto di prezzemolo
Salsa:
3 cucchiai di panna acida
sale
Quantità di acqua da versare nella base:
fino al livello massimo

Pulite i porri privandoli delle foglie
verdi; tagliate le parti bianche in pezzetti
lunghi circa 3–4 cm. Inserite nella vaschet-
ta per la cottura a vapore un divisorio (2:1).
Disponete i porri nel comparto più grosso
della vaschetta e fate cuocere per 15
minuti.

Forate alcune volte la pelle dei würstel
con una forchetta e disponeteli nel com-
parto più piccolo e fate cuocere tutto
assieme per altri 6 minuti.
3.
Tritate finemente il prezzemolo.
Potete farlo più facilmente se utilizzate
l’accessorio tritatutto di Braun Minipimer.
4.
Mescolate la panna acida con parte
dell’acqua di cottura delle verdure prele-
vandola dalla vaschetta raccogligocce;
insaporite con sale a piacere.
5.
Disponete le pietanze su un piatto
preriscaldato, guarnendo con il prezzemolo
tritato e con la salsa preparata.
