Vegetarische erwtensoep
Een heerlijke wintersoep naar Oud-Hollands recept, maar wel
vegetarisch en dus supersnel klaar!
Ingrediënten
3 eetlepels zonnebloemolie
500 g preien, in ringen
300 g knolselderij, in reepjes
3 aardappels, in blokjes
2 winterwortelen, in halve plakjes
400 g spliterwten
1 laurierblad
6 peperkorrels, gekneusd
2 groentebouillontabletten
1 schaal vegetarische worstjes (Tivall, 210 gram)
4 takjes bladselderij, groen fijngehakt
zeezout uit de molen, zwarte peper
Bereiding
Verhit de zonnebloemolie in de snelkookpan en laat hierin de
prei op laag vuur, al omscheppend, 3 minuten ‘zweten’. Vul de
snelkookpan met de rest van de groentes, spliterwten, specerijen
en bouillontabletten. Schenk er 2 liter water bij. Sluit de pan en
breng de pan onder drukstand 1. Kook de soep gaar in 20 minu-
ten. Snijd intussen de vegetarische worstjes in schuine stukjes.
Breng de pan volgens de instructies van de druk af en open de
pan. Roer de spliterwten los. Roer de worst bij de soep en breng
de soep in de open snelkookpan al roerend aan de kook. Roer
het selderijgroen erbij en breng de soep op smaak met zout en
peper.
Tip
Serveer de soep met kaasroggetjes.
