Recipe
Serves 6
2 ¼ cups yellow cornmeal
1/3 cup unsalted butter, melted
1 tbsp granulated sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 large eggs
1. Pre-heat the oven to 180°C.
2. Spread the cornmeal over a baking sheet.

4. Spray 6 mini loaf pans or silicone moulds with non-stick cooking spray and set aside.
5. Add the remaining ingredients to the cornmeal in a mixing bowl and mix until smooth.

7. Cover the tops with small pieces of non-stick aluminium foil.
8. Fill the water reservoir with water.
9. Place the mini loaf pans in the steam bowl.
10. Cover the steamer and set the time to 15 minutes.
11. Let them steam for 15 minutes; check for doneness by inserting a toothpick in the side; it should come out with just a few
moist crumbs clinging to it.
12. Once cooked, remove from steamer and serve.
