9.2 Pimiento guisado con quinoa

Tiempo de preparación: 20 - 30 minutos
Ingredientes:
100 g de quinoa
4 pimientos (rojos)
300 ml de caldo de verduras
120 gr. de champiñones
100 g de queso parmesano rallado
curry en polvo
1 cucharadita de hinojo (molido)
1 chalota
1 diente de ajo
1 - 2 cucharadas de aceite de girasol / aceite de oliva u otro aceite veg-
etal
En primer lugar, lavar bien la quinoa con agua fría para eliminar las sustancias
amargas que pueda contener. Luego calentar 300 ml de caldo de verduras con el
hinojo y cocinar la quinoa en el caldo durante 10 minutos. Rerar la quinoa del
fuego y dejarla reposar durante otros 10 minutos. Mientras tanto, cortar los pi-
mientos por debajo del tallo y desecharlo. Rerar completamente las semillas del
pimentón. A connuación pelar y picar la chalota y el ajo. Cortar los champiñones
en trozos pequeños y freirlos brevemente en una sartén con el polvo de curry
junto las chalotas y el ajo. Por úlmo, agregue la quinoa a la mezcla de cham-
piñones y añada el parmesano. Rellenar con esta mezcla los pimientos. Poner los
pimientos con un poco de aceite en la freidora de aire caliente Arendo durante
unos 12 - 15 minutos a unos 160°C.
