Fritieren Sie die Champignons in 2 Minuten gar und
goldbraun, lassen Sie sie dann abtropfen und servieren Sie sie
mit dem Tomatensorbet. Garnieren Sie das Ganze mit einem
Zweig Koriander.
SAHNEEIS
Zutaten:
1,25 dl Milch
1,25 dl Sahne
1 aufgeschnittene Vanilleschote
3 Eigelb
45 gr Zucker
Zubereitung:
Die Milch mit der Sahne und der Vanilleschote zum Kochen
bringen und danach ganz abkühlen lassen. Das Eigelb mit dem
Zucker zu einer dicken und weißen Masse schlagen. Das Mark
aus der Vanilleschote schaben und in die Milch geben. Dies bis
zum Kochen erwärmen und dann das Eigelb hinzugeben und
einquirlen. In der Eismaschine in circa 35 Minuten zu Sahneeis
verarbeiten. Stellen Sie das Eis nach der Zubereitung in der
Eismaschine ungefähr eine halbe Stunde in den Gefrierschrank.
Pistazieneis
Zutaten:
125 ml Vollmilch
50 gr Zucker
1 Ei
75 gr geschälte Pistazien
225 gr Sahne
1 TL Vanilleessenz
Zubereitung:
Erwärmen Sie die Milch in einem kleinen Topf.
Schlagen Sie die Eier zusammen mit dem Zucker in einer
separaten Schüssel.
Schenken Sie die warme Milch unter Rühren langsam in die Ei-
