Kućna kobasica
Svinsko meso srednje masnoće 4,5 kg, slanina 0,5 kg, bulion
od kostiju 1 čaša, so 6-7 kašika, saletra 1 ravna kašika,
biber 1 kašika (mleveni biber), biber sa Jamajke 12-15 zrna
(samleti), beli luk 5-6 komadića (izseckati), crevo 7 m.
Mesa samleti u situ sa otvorima 8 mm. S izmešati sa sale-
trom i začinima, dodati biber, dodati u meso, izmešati kao
testo do čega dodavati postepeno bulion. Ostaviti u hladnom
mestu na 24 sati. Na sud mašine staviti natikać za kobasice.
Napuniti crevo dužine okolo 1m, formirajući razmake od
30–40 cm. Okrenite pažnju da potpuno ne zapušite otvore za
odvođenje vazduha natikača.
Osušiti kobasicu 6 sati. Dimiti toplim dimom 14 sati ili vrućim
dimom oko 2,5 sati.
Salata od crvenog kupusa
40 dag crvenog kupusa, 20 dag jabuka, 2 kašike ulja, sok od
limuna, so, šećer.
Kupus očistiti izsckati na ribežu pomoću trenice za sitne
komade. Jabuku očistiti i narendšećerom.
Salata od celera
40 dag celera, 20 dag jabuka, 2 kašika ulja ili pavlake, sok
od limuna, so, šećer.
Celer rendati na sitne komadiće. Začiniti pavlakom ili uljem.
Dodati šećer, sok od limuna i so.
