Skölj kycklingen och klappa den torr med hushållspapper Vrid vingspetsarna under
ryggen och bind ihop benen med ett snöre. Pensla hela den yttre kycklingytan med olja
och krydda lätt med salt och peppar. Lägg kycklingen med bröstsidan upp på grillgallret
och grilla tills innertemperaturen når 82 °C i den tjockaste delen och 77 °C i bröstet,
1-1⁄4 till 1-1⁄2 timme. Lägg över kycklingen på serveringsfat, låt stå 10 minuter innan du
trancherar.

1 salladslök, hackad
1⁄4 tsk mald kanel
1⁄8 tsk mald kryddnejlika
2 lbs. (0,9 kg) magert lamm, skär i 3,8 cm kuber
Marinad: Blanda ingredienserna i en låg glasform eller i en plastpåse. Kyl övertäckt i 4-6
timmar. Låt lammet rinna av, spara marinaden. Häll marinaden i en liten gryta. Låt den
koka upp, och koka i en minut. Trä upp lammbitarna på 4-6 grillspett. Grilla lammkuberna
över direkt mediumvärme tills de är mediumstekta, ca 10 minuter, vänd och ös med den
sparade marinaden en gång efter halva grilltiden.
