Cooking time
- Put the sugar and the 400ml of water into
the bowl and heat for 10 min at 100°C, at
speed 3 in manual mode.
- Add the cold water and the lime juice.
- Pour the mixture into an ice cube bag and
leave it in the freezer for 24 hours.
- The next day place the 4-blade knife,
and the lime ice cubes inside the bowl.
- Start program 21 (SORBET).
- When you hear the beep, scrape the edges
of the bowl with the spatula to bring
the ice towards the blades at the center,
and close the lid to restart the program.
- After the second beep, remove
the blades and place the whisk
inside the bowl.
- Scrape the edges with the
spatula to bring the ice back
towards the whisk
- Add the egg white.
- Close the lid of the Compact
Cook bowl and wait for the
program.to be over.
- Serve immediately or keep it aside in
the freezer.
- 400ml water.
- 225ml ice-cold water.
- 225ml lime juice.
- 350g powdered sugar.
- 1 egg white.
This sorbet is delicious
when served with
homemade meringue
(see recipe P.68) and
with lime zest. You can
make this recipe with
any frozen fruit:
raspberries, red fruits etc. Give
yourself a treat!
For an even creamier sorbet, add
some creamy cottage cheese or
some crème fraîche, and you will get
a real ice-cream. You can make
confectioner's sugar by mixing sugar
cubes in the Compact Cook bowl for
20 seconds at Speed 10.
.- Place the 4-blade knife inside the Compact
Cook bowl.
- Add the frozen mango and pineapple chunks,
taken out of the freezer 10 minutes beforehand.
- Start program 21 (SORBET).
- When you hear the beep, scrape the edges of
the bowl with the spatula to bring any ice-
cream to the center towards the blades and
restart the program by closing the lid.
.- After the second beep, remove the 4-blade
knife and place the whisk inside the bowl.
- Scr
ape the edges of the bowl with the spatula
to bring any ice-cream to the center towards the
whisk.
- Add the egg white, the sugar, the lemon juice,
and close the lid to restart the program.
- If some fruit chunks remain in the bowl start
the program "CHOP" after having set up the 4-
blade knife to make the sorbet ever smoothier.
- Keep in the refrigerator.
