45. GEGRILDE GROENTEN MET SCAMORZA SALADE

Ingrediënten voor 4 personen:
1 aubergine
1 gele paprika
2 courgettes
1 gerookte scamorza (Italiaanse peervormige kaas van volle koemelk)
1 krop krulsla of frisée sla
4 zongedroogde tomaten
1 teentje knoflook
4 jeneverbessen
9 eetlepels olijfolie extra vierge
peper en zout
Bereiding:
Was alle groenten en laat de sla goed uitlekken. Verhit een grillpan en snijd
ondertussen de uiteinden van de courgette en snijd die in de lengte doormidden.
Haal het groene kapje van de aubergine en snijd de aubergine in plakken. Haal
zaden en membraan uit de peper en snijd die in dunne plakjes. Snijd de scamorza in
2 cm dikke plakken en wrijf ze aan beide zijden in met een beetje olie.
Gril de groenten en de scamorza 4-5 minuten aan beide zijden. Snijd dan de
scamorza in repen en leg ze met de groenten op een grote serveerschaal. Snijd de
zongedroogde tomaten in plakken en doe die in een kom samen met de in plakjes
gesneden knoflook, licht gekneusde jeneverbessen, resterende olijfolie en een snufje
zout en peper. Klop licht los met een vork en schenk de emulsie over de gegrilde
groenten en de kaasreepjes. Laat 15 minuten staan.
Leg de met de hand gescheurde slabladeren op aparte borden en leg daar de gegrilde
groenten en scamorza bovenop. Besprenkel met de emulsie en serveer direct.
