8. SPIESEN MET KALFSVLEES, PANCETTA EN ABRIKOOS

Ingrediënten voor 4 personen:
800 g kalfsvlees
12 gedroogde abrikozen
8 plakken pancetta
2 eetlepels honing
1 citroen
tijm
rozemarijn
olie
peper en zout
Ingrediënten voor de saus:
2 eetlepels semi-sweet mosterd
10 cl slagroom
10 cl bouillon
1 sjalot
Bereiding:
Los de honing op in het sap van de citroen en 2 eetlepels olie. Voeg een eetlepel tijm
toe en de gehakte rozemarijn. Zet het mengsel apart. Snijd het vlees in blokken en
doe het in een schaal. Schenk er het honingmengsel over heen en laat een uur
marineren.
In die tijd bereidt u de saus door de mosterd en de gesnipperde ui te mengen in een
kom. Roer de bouillon en de slagroom door het mengsel en laat deze op middelhoog
vuur even indikken.
Stel de spiesen samen door afwisselend vlees, opgerolde pancetta en abrikoos erop te
prikken. Bestrijk met de olie en bak in 20 minuten gaar. Leg de spiesen op een
serveerschaal en breng ze op smaak met peper, zout en de saus. Direct serveren.
