ZALM MET WILDE RIJST:
Een rustiek gerecht waarbij het beste uit de natuur bij u op tafel komt.
Ingrediënten voor 4 porties:
Rijst:
1½ kop wilde rijst
3 koppen kippen- of groentebouillon (zoutarm indien kant-en-klaar gekocht)
3 eetlepels versgeraspte sinaasappelschil
2 eetlepels vers sinaasappelsap
1 theelepel zeezout
1 eetlepel ongezouten boter
½ kop gehakte pecannoten
½ kop sjalot
½ kop gedroogde cranberries
½ kop gehakte verse Italiaanse peterselie
Zalm:
2 koppen vers sinaasappelsap
1 steranijs
1 theelepel zeezout
½ kop olijfolie
2 teentjes knoflook
½ theelepel gemalen komijn
4 zalmfilets (± 170 gr per stuk)
Bereiding:
Rijst:
Spoel de wilde rijst in een vergiet onder koud stromend water schoon.
Doe in een Orgreenic steelpan rijst, bouillon, sinaasappelschil, sinaasappelsap,
zout en boter.
Doe de deksel erop en kook in 30-45 minuten gaar.
Roer pecannoot, sjalot, cranberries en peterselie erdoor en zet apart.
Zalm:
Doe sinaasappelsap met steranijs in een Orgreenic steelpan.
Breng aan de kook en laat tot ongeveer 1½ kop inkoken.
Laat afkoelen tot kamertemperatuur en verwijder dan de steranijs. Doe in een
blender het afgekoelde sinaasappelsap, zout, olie, knoflook en de komijn.
Mix grondig in ongeveer 30 seconden.
Schenk de helft van het mengsel in een hersluitbare plastic zak en doe de zalm
erbij.
