KIP MARSALA:
U zult het gevoel hebben dat u werd aangestuurd door een Italiaanse chef bij de
bereiding van dit zeer smakelijke gerecht.
Ingrediënten voor 4 porties:
4 kipfilets
zout en versgemalen zwarte peper naar smaak
2 eetlepels versgehakte peterselie
¼ kop olijfolie van goede kwaliteit (optioneel)
2 koppen champignons in plakjes gesneden
½ kop droge Marsala wijn
Bereiding:
Sla de kipfilets plat en dun tussen keukenpapier of plastic folie met behulp van
een keukenbijl of houten hamer.
Meng peper, zout en peterselie goed door elkaar.
Bestrooi iedere kipfilet met het peterseliemengsel.
Verhit een medium Orgreenic koekenpan (voeg olie toe indien gewenst)
Wanneer de pan heet is bakt u de kipfilets 2-3 minuten aan beide zijden.
Haal de kipfilets uit de pan en zet ze apart.
Doe de champignons in de pan en bak ze onder regelmatig roeren tot ze bruin
zijn en al hun vocht hebben losgelaten.
Voeg de Marsala wijn toe en breng aan de kook, maak eventuele aanbaksels los.
Wanneer de wijn tot de helft gereduceerd is voegt u zout en peper naar smaak toe.
Temper het vuur tot middelmatig en doe de kipfilets weer terug in de pan en
warm de kipfilets goed door en laat de saus wat inkoken in 3-4 minuten.
Direct serveren.
