K I P - TA R WE - G E M B E R S O E P
Voor 4 personen
Ingrediënten:
1 eetlepel pindaolie
4 groene, dungesneden uien
5 cm grote verse, fijngesneden stukken gember
3 koppen (ca. 750 gr) verse tarwekorrels
1 liter kippenbouillon
1 eetlepel Sojasaus
1 eetlepel Shao Xing kookwijn
½ theelepel Sesamolie
2 kleine, dungesneden kippenborstfilets
¼ kopje fijngesneden, verse koriander (indien gewenst)
witte peper
Bereiding:
1. Verhit de olie in een grote pan. Voeg de uien en de gember toe en bak deze al
roerend gedurende 2 minuten. Voeg de tarwekorrels toe roer dit gedurende
3–4 minuten door.
2. Voeg de kippenbouillon toe en breng het geheel aan de kook. Daarna op laag
vuur gedurende 10 minuten laten doorkoken. Vervolgens van het vuur verwij-
deren en laten afkoelen.
3. Doe de helft van de soep in de blenderkom. Sluit de deksel en mix deze gedu-
rende 30 seconden op de instelling 2/ CHOP. Doe de gepureerde soep bij de rest
van de soep en voeg de sojasaus, kookwijn en de kippenborst toe. Vervolgens
op middelmatig vuur de soep laten doorkoken, totdat de kipfilets goed gaar zijn.
4. Voeg naar wens voor het serveren de verse koriander en witte peper toe.
Tip:
Shao Xing is een Chinese kookwijn en is verkrijgbaar bij de Aziatische super-
markt of supermarkten met een ruim assortiment te verkrijgen.
