RECEPTEN
BASISRECEPT VOOR BELGISCHE WAFELS
Ingrediënten voor 10 wafels
355 ml warm, maar niet heet water (zodat de gist goed kan rijzen)
2 ¼ theelepel droge gist
3 koppen (ca. 450 gr) gezeefd meel
snufje zout
3 grote eieren, scheidt het eiwit en eigeel
1 extra eiwit
1/3 kop (75 gr) suiker
230 ml melk
8 eetlepels gesmolten boter
2 theelepels bakolie
2 theelepels vanillesuiker
Bereiding
1. Neem een aparte kom, vul de helft met warm water en los de gist en een snufje
suiker hierin op.
2. Laat het gist 5 tot 10 minuten staan totdat het mengsel gaat schuimen.
3. Monteer de garde aan de mixerkop en spoel de mengkom af onder warm wa-
ter, zodat deze wordt voorverwarmd.
4. Doe 3 eigeel en 1 eiwit en de suiker zoals het gist/water mengsel in de meng-
kom. Mix de ingrediënten op de snelheidstand „Folding/Kneading“ alleen zo lang
als nodig is om alles goed vermengd te krijgen.
5. Voeg nu, via de vulopening, de rest van het water, dan de melk en bakolie en
vanillesuiker toe, totdat alles goed gemengd is.
6. Pak nu de garde en monteer deze aan de mixerkop.
7. Zet de snelheid op „Folding/Kneading“ en voeg, beetje voor beetje, via de vu-
lopening het meel aan het deeg toe. Mix alleen gedurende de tijd die nodig is
om het deeg glad is.
