Recettes
Crème de légumes
2 à 4 personnes
Ingrédients
2 - 3 CS d’huile
200 g d’oignons
200 g de pommes de terre (les variétés à chair farineuse
sont par
ticulièrement adaptées)
200 g de carottes
350 - 400 ml de bouillon de légumes (frais ou en cube)
Sel, poivre, noix de muscade
5 g de persil

1) Peler les oignons et les couper en dés fi ns. Laver les carottes, les peler et les
couper en rondelles. Peler les pommes de terre, les rincer et les couper en
dés d’env. 2 cm.
2) Chauff er l’huile dans une casserole, y faire blondir les oignons. Ajouter les
carottes et les pommes de terre, également les faire revenir. Rajouter du
bouillon jusqu’à ce que les légumes soient bien recouverts et les faire bouillir
pendant 10 à 15 minutes jusqu’à ce qu’ils soient bien cuits. Rajouter du
bouillon en cas de besoin si les légumes ne sont plus recouverts.
3) Laver le persil, le secouer pour enlever l’excès d’humidité et retirer les tiges.
Déchirer le persil en gros morceaux et le rajouter à la soupe. Réduire le tout en
purée pendant environ 1 minute avec le mixeur plongeant 5. Assaissonner au
sel, au poivre et à la noix de muscade râpée.
