9.1 Vegetarische minestrone
Voor 4 personen
Ingrediënten:
1,8 liter plantaardige bouillon (warm)
800 gram (2 blikken) tomaten in stukjes
425 gram (1 blik) kidneybonen
2 uien
2 stengels bleekselderij
3 wortelen
200 g sperziebonen uit een pot of blik
1 courgette
2 teentjes knoflook
1/2 bos verse peterselie
2 theelepels gedroogde oregano
1 theelepel zout
1/2 theelepel gedroogde tijm
versgemalen zwarte peper
75 g elleboogpasta
30 gram versgeraspte Parmezaanse kaas
Bereiding:
Was de bleekselderij, wortelen en courgette en snijd deze in fijne blokjes. Schil de uien en knoflook en
hak ze fijn.
Giet de plantaardige bouillon in de keramische pan (4) en voeg de tomaten, kidneybonen, sperziebonen
en de voorbereide ingrediënten toe. Voeg vervolgens de gedroogde kruiden aan de minestrone toe en
kruid met zout en peper naar smaak.
Als u verse sperziebonen gebruikt, kookt u ze ongeveer 20 minuten voor, voordat u ze in
de slowcooker doet.
Verse kruiden verliezen hun smaak na een lange kooktijd, dus voegt u de verse
peterselie pas aan het einde toe.
Sluit het deksel (2) en kook de minestrone gedurende 6 uur op LOW (laag).
Als de minestrone klaar is, brengt u water met zout in een aparte pan aan de kook en kookt u de pasta
volgens de aanwijzingen op de verpakking.
Was de peterselie en hak deze fijn.
Roer de gekookte pasta en de peterselie door de bereide minestrone en strooi een beetje vers geraspte
Parmezaanse kaas erover.
