Opskrifter
Kibbeh
Ingredienser til kødfyldet:
400 g magert okse- eller lammekød
2 løg
10 g mel
25 g groft hakkede pinjekerner
1/2 tsk. allehånde, kanel, spidskommen, kommen (stødt), nelliker (stødt),
muskatnød (stødt)
Salt og peber
Ingredienser til rørene:
500 g bulgur (udblødt)
500 g magert okse- eller lammekød
1 løg
1 knivspids peber, 1 knivspids chili
Kødfyld
Først tilberedes kødfyldet, så det kan køle af, mens rørene tilberedes.
Kør kødet to gange gennem kødhakkeren (først med den grove og derefter med
den fine hulskive 0). Bland kødet, melet, pinjekernerne og krydderierne godt.
Hak og steg løgene. Tilsæt kødmassen, og bland den med løgene. Steg det hele
godt igennem, og lad det køle af.
Rør
Kør kødet til rørene igennem kødhakkeren to gange (først med den grove og
derefter med den fine hulskive 0) og bland det med bulgur, de finthakkede løg
og krydderierne. Denne masse køres ligeledes to gange gennem kødhakkeren.
Udskift hulskiven 0 med kibbeh-tilbehøret r (se kapitlet "Montering af kibbeh-
tilbehøret"), og form ca. 7 cm lange kibbeh-rør.
Tilberedning:
Fyld kibbeh-rørene med kødfyld, når de er færdige, og tryk de to ender sammen,
så der dannes små lommer. Friter de færdige kibbeh-rør i 190 °C varm olie i ca.
3 minutter. De færdige kibbeh-rør skal være gyldenbrune.
