Trascorsa la meta del tempo, girare i pezzi di carne.
Quando l'arrosto è pronto, lasciarlo riposare per altri 10 minuti
nel forno spento e chiuso in modo che il sugo della carne si
distribuisca meglio.
Terminata la cottura, avvolgere il roastbeef con una pellicola in
alluminio e lasciarlo riposare nel forno per circa 10 minuti.
Se si desidera preparare l'arrosto di maiale con la cotenna,
incidere quest'ultima a forma di croce e, inizialmente, collocare
l'arrosto nella pentola con la cotenna rivolta verso il basso.
