Smart madlavning
Quiche Lorraine
Ingredienser Bagværk: 200 g almindeligt mel, 80 g smør, 1 æg
Fyld: 75 g fedtfri bacon i tern, 125 ml øde, 125 g crème fraiche, 2 æg,
pisket, 100 g revet ost fra Schweiz, salt og peber
Vejledning For at lave dejen skal du putte mel, smør og æg i en skål og blande til
en blød dej og derefter lade den hvile i køleskabet i 30 min. Rul dejen ud
og læg den i det smurte keramiske fad til quiche (25 cm i diameter). Prik
bunden med en gaffel. Bland æg, øde, creme fraiche, ost, salt og peber.
Hæld det på bagværket lige inden bagning.
Frugt-crumbler
Ingredienser Topping: 200 g mel, 100 g smør, 100 g sukker, 2 g salt, 2 g kanelpulver
Frugt: 600 g blandet frugt
Vejledning Bland alle ingredienser, indtil de er smuldrede til at lave topping. Fordel
de blandede frugter i et ovnfad og drys crumblen på.
Æbletærte
Ingredienser Bagværk: 275 g mel, 1/2 spsk salt, 125 g hvidt ricinussukker, 8 g
vaniljesukker, 175 g koldt smør, 1 æg (pisket)
Fyld: 750 g faste hele æbler, 1 spsk citronsaft, 40 g sukker, 1/2 spsk
kanel, 50 g kerneløse rosiner, 2 spsk brødkrummer
Vejledning
Sigt melet med saltet over en stor skål. Sigt ricinussukker og vaniljesukker
hermed. Skær med 2 knive smørret gennem melet i små tern. Tilsæt

af det piskede æg. Ælt alle ingredienserne i foodprocessoren, indtil der
kommer en smuldrende masse. Form dejen til en kugle med hænderne.
Pak den ind i plastfolie og lad den stå på køl i cirka 30 min.
Smør springformen (24-26 cm diameter) og drys overaden med mel.
Rul 3/4 af dejen ud til en tykkelse på 5 mm. Kom det i bageformen (bund
og sider).
Skræl og udkern æblerne. Skær dem i terninger på ca. 3/4 x 3/4 cm. Dryp
æblerne med citronsaft og bland godt. Vask og tør ribs og rosiner. Tilsæt
sukker, kanel, rosiner og ribs. Bland godt og drys bunden af dejen med
brødkrummer. Tryk let.
Rul resten af dejen ud. Skær dejen i små strimler og læg dem på kryds og
tværs på fyldet. Pensl tærten jævnt med resten af det sammenpiskede æg.
