Crêpe Suzette
Ingrédients pour 4 personnes:
100 g de farine de froment
4 œufs
90 g de beurre fondu
1 pincée de sel
1 càs de sucre glace
6 càs de lait
1 càs de rhum
1 càs d’huile neutre
2 oranges non traitées
12 morceaux de sucre (cubes)
jus d’1 citron
1 càs d’amandes effilées
liqueur d’orange, par ex. Grand
Marnier (pour flamber)
Procédez comme ceci:
1. Mélanger la farine avec les œufs,
environ un tiers du beurre fondu, le
sel, le sucre glace, le lait et le rhum
jusqu’à obtention d’une pâte liquide.
2. Laisser reposer 30 min puis
encore une fois bien remuer.
Éventuellement diluer avec 1 à 2 càs
d’eau minérale.
3. Étaler en forme de cercle une
petite louche de pâte sur la plaque
de cuisson de la crêpière avec le
répartiteur.
4. Faire dorer des deux côtés.
5. Plier (en quatre) la crêpe et réserver
au chaud.
6. Réchauffer le reste de beurre dans
une poêle. Râper le zeste d’orange
avec les morceaux de sucre puis
presser les oranges. Faire fondre les
morceaux de sucre dans le beurre,
verser le jus d’orange et de citron et
laisser mijoter 1 à 2 min.
7. Retirer la poêle du feu, placer les
crêpes pliées les unes à côté des
autres, arroser d’un peu de sauce et
laisser mariner quelques minutes.
Parsemer d’amandes effilées et
flamber avec la liqueur d’orange
réchauffée. Servir brûlant.
