Marinades
The use of marinades is very common in grilling. Their
purpose is to season the grilled food to taste. However,
marinades also cause the food to stick to the grids. Sim-
ilarly, oily marinades may spill on the burners and cause
the ame to are up, or even cause grease res. With
these few tips, you can reduce the problems caused by
marinades:
1. Try to wipe extra marinade o the food before
putting them on the grill.
2. If you add marinade during the grilling, always
use a cooking brush. Do not pour the marinade
on the food straight from a bottle.
3. Opt for dry rubs during grilling.
Preventing food from sticking
to the grill
Food sticking to the grill or grid is a common phenom-
enon for all barbecue cooks. Here are a few tips to avoid
excessive sticking:
1. Remember to pre-heat the grill so that it is su-
ciently hot.
2. Clean the grids before putting food on the grill.
3. Spread oil on the grilling surface and the food to
be grilled before putting it on the grill.
4. Do not ip the food on the grill too quickly; let
the surface be grilled properly.
Do not use leftover marinade from prepar-
ing raw meat to season cooked food. In this
case, the bacteria from the raw meat will
transfer to the cooked food.
Heat levels of the cooking areas
Conventional and common gas burners (pipe/plate
burners) cause the grilling area to have uneven tem-
peratures. This should be seen as a feature rather than a
bug. The general rule is that the back of the grilling area
(A) is hotter than the front (B). The cool area at the front
is caused by the Venturi tube connected to the burner.
In this tube, gas and air are mixed into a compound
suitable for burning. The ame does not burn inside the
Venturi tube.
Mustang also oers gas grill models where the grilling
surface has more even temperature areas. These grills
use U burners or separate burners where the Venturi
tube structure is exceptionally in the middle of the
burner. Thanks to these solutions, the ame also burns
at the front of the burner.
The heating grid at the back of the grill (C) is cooler, so
you can use it to keep food warm or slowly cook it at
indirect heat.
