OPSKRIFTER
Supper
Minestrone
55 g smør
100 g stribet bacon i tern
2 løg, finthakket
2 fed hvidløg, knust
4 seleristilke, hakket
500 g kartofler, skrællet
og i tern
2 store gulerødder, skrællet
og i tern
4 kålblade, strimlet
4 store tomater, flået og
grofthakket
2,25 liter kyllingbouillon
3 spsk. tomatpuré
3 tsk. Worcestershire-sauce
Salt og friskmalet sort peber
2 spsk. persille, finthakket
150 g pastaskaller
3 spsk. parmesanost, revet
Smelt smøret i en pande, og steg
bacon og grøntsager, indtil de er
bløde. Lav bouillon, og tilsæt
bouillon, bacon og grøntsager til
gryden. Tilsæt resten af
ingredienserne undtagen persille,
pasta og parmesanost. Sæt gryden
på basen, læg låget på, og tilbered i
ca. 4-6 timer. 45 minutter før
servering tilsættes pasta og persille.
Smag til med krydderier, hvis det er
nødvendigt, og drys parmesanost
henover. Server med rustikt, hvidt
brød.
Linsesuppe
200 g røget bacon, hakket
2 store løg, finthakket
4 gulerødder, finthakket
4 seleristilke i tynde skiver
400 g orange linser
2 x 400 g dåser hakkede tomater
2 liter kyllingbouillon
4 tsk. Worcestershire-sauce
knivspids muskatnød
1 laurbærblad
2 tsk. basilikum
salt og friskmalet sort peber
2 spsk. persille, finthakket
Steg bacon på en pande ved middel
varme, indtil fedtet begynder at
smelte. Tilsæt resten af
ingredienserne undtagen persille, og
bring i kog. Lad simre i 2 minutter.
Hæld over i gryden. Sæt gryden til
langtidsstegning på basen, og
tildæk med låg. Tilbered i ca. 4-8
timer. Hvis du ønsker en mere glat
konsistens, kan du blende suppen,
når den er nedkølet og derefter
genopvarme på komfuret. Drys med
persille, og server med rustikt, hvidt
brød.

60 g smør
2,2 kg blandede grøntsager, f.eks.
kartofler, løg, gulerødder,
pastinak, bladseleri, porrer,
tomat
60 g mel
Salt og friskmalet sort peber
2 tsk. blandede krydderurter
