Varkensfilet in bladerdeeg
Totale bereidingstijd: 90-100 minuten
Ingrediënten voor ca. 4 personen:
2 varkensfilets (à 300 g)
zout, peper, paprika
50 g boter
75 g doorregen spek,
in blokjes
1 ui, in blokjes
400 g champignonschijfjes
4 tomaten (blik)
1 eetlepel peterselie, gehakt
ca. 450 g bladerdeeg (diepvries)
Voor het bestrijken:
1 eidooier
4 eetlepels melk
Bereiding
1. Kruid de filets met zout, peper en pa-
prika. Braad het vlees kort aan in een
pan met boter. Haal het vlees weer uit
de pan.
2. Doe het spek en de uien in het
braadvet en bak deze. Voeg de
champignonschijfjes en de uitgelekte,
kleiner gesneden tomaten toe. Stoof het
geheel even en kruid het met zout,
peper en paprika.
3. Rol het bladerdeeg tot twee
rechthoeken uit (van ca. 30 x 20 cm).
Leg hierop een filet. Verdeel de vulling
over de filets. Sluit het bladerdeeg om
het vlees en de vulling. Druk de randen
goed samen. Maak van de deegrestjes
decoraties en leg die op de pakketjes.
4. Leg de pakketjes op de met water
afgespoelde glazen schaal en bestrijk
het deeg met het geklutste ei-melk-
mengsel. Bak de pakketjes goudbruin.
5. Halveer de filets voor het serveren.
