Ente à l’orange
Zubereitungszeit: 130–140 Minuten
Zutaten für ca. 4 Portionen
1 Ente (2000 g)
Salz, Pfeffer, Thymian
3 Orangen, geschält, gewürfelt
2 Äpfel, geschält, gewürfelt
1 Lorbeerblatt
125 ml Weißwein
350 ml Geflügelbrühe (Instant)
125 ml Orangensaft
Speisestärke
Zum Dekorieren:
1 Orange, ungeschält in dünne Schei-
ben geschnitten
Zubereitung
1. Gesäuberte Ente mit Salz, Pfeffer
und Thymian würzen. Orangen- und
Apfelwürfel mit dem Lorbeerblatt ins
Enteninnere geben.
2. Ente mit der Brustseite nach unten in
einen Bräter legen und offen braten.
Nach der Hälfte der Garzeit wenden,
etwas Wein und Brühe angießen und
offen weitergaren.
3. Ente entnehmen. Bratenfond mit
Wein, Brühe und Orangensaft auffüllen,
mit Speisestärke binden.
4. Ente in Portionsstücke teilen. Ente mit
Orangenscheiben garnieren. Mit der
Soße servieren.
