Kalbshaxe
Zubereitungszeit: 120–130 Minuten
Zutaten für ca. 5 Portionen
1 Kalbshaxe (1500 g)
Salz, schwarzer Pfeffer
40 g flüssige Butter
2 (100 g) Möhren
100 g Sellerie
1 (50 g) Zwiebel
3 Nelken
250 ml heißes Wasser
1/2 Bund Petersilie
2 EL saure Sahne
Speisestärke
Zubereitung
1. Kalbshaxe abspülen, trockentupfen,
mit Salz und Pfeffer würzen und mit
Butter bestreichen. In einen Bräter le-
gen und etwa 60 Minuten garen.
2. Das geputzte und kleingeschnittene
Gemüse, die mit Nelken gespickte
Zwiebel, Wasser und Petersilie zufügen
und zugedeckt etwa 35 Minuten garen.
Den Deckel abnehmen und 1/2 l Flüs
-
sigkeit angießen. Das Angießen noch
zweimal wiederholen.
3. Bratenfond mit Wasser auffüllen (falls
erforderlich) und die saure Sahne zufü
-
gen. Mit angerührter Speisestärke leicht
binden.
