Obstkuchen
Zubereitungszeit: 110–120 Minuten
Zutaten für ca. 20 Portionen
Teig:
375 g Mehl
1 Würfel (42 g) Hefe
etwa 125 ml lauwarme Milch
40 g Zucker
75 g flüssige Butter oder Margarine
1Ei
Belag:
etwa 1500 g Äpfel, Pflaumen oder Kir-
schen
Zum Bestreuen:
200 g Mehl
125 g Zucker
1 Päckchen Vanillinzucker
125 g Butter oder Margarine
1/2 TL Zimt
Zubereitung
1. Mehl in eine Schüssel geben, eine
Vertiefung eindrücken. Zerkrümelte
Hefe, etwas Zucker und etwas Milch in
die Vertiefung geben, mit wenig Mehl
glatt rühren und im Garraum bei 50 °C
etwa 20 Minuten aufgehen lassen.
2. Diesen Vorteig mit den restlichen
Teigzutaten zu einem glatten Teig ver
-
kneten, wieder bei 50 °C etwa 30 Minu
-
ten aufgehen lassen. Teig noch mal
kurz durchkneten, dann in der gefette
-
ten Glasschale ausrollen.
3. Vorbereitetes Obst (geschälte Äpfel
in 1/2 cm breite Scheiben schneiden,
Kirschen und Pflaumen entkernen)
gleichmäßig auf dem Teig verteilen.
4. Streuselzutaten durch Verkneten zu
Streuseln verarbeiten. Auf das Obst
streuen, im Garraum wieder bei 50 °C
etwa 30 Minuten aufgehen lassen, dann
goldbraun backen.
