Temps de préparation: 200minutes

Pour la pâte
175g de seigle égrugé
500g de farine de blé intégrale
14g de levure sèche
2c.àc. de sel
75g de sirop de betterave à sucre
500ml de petit-lait| tiède
50g de cerneaux de noix, coupés en
deux
100g de noisettes, entières

1c.às. de beurre

Présentoir à gâteau
Préparation
Mélanger le seigle, la farine, le sel et la
levure sèche. Pétrir avec le sirop et le
petit-lait pendant 4 à 5minutes. Ajouter
les noix, les noisettes et pétrir pendant
2 à 3minutes.
Mettre la pâte dans un récipient à dé-
couvert et l'enfourner. Faire lever sui-
vant les réglages indiqués.
Beurrer le moule. Fariner le plan de tra-
vail, pétrir brièvement la pâte, former un
pâton d'env. 28cm de long et le mettre
dans le moule.
Enfourner sur la grille et faire cuire.
Après cuisson, démouler le pain, le lais-
ser refroidir sur un présentoir à gâteau
puis le placer dans un récipient hermé-
tique. Le pain sera encore meilleur si
vous ne l'entamez que le lendemain.
