Brioche tressée

Pour la pâte
42g de levure, fraîche
150ml de lait, 3,5% de MG | tiède
500g de farine de blé, type45
70g de sucre
100g de beurre
1œuf, calibreM
1c.àc. de zeste de citron
2 pincées de sel
Pour dorer
2c.às. de lait, 3,5% de MG
Pour parsemer
20g d'amandes effilées
20g de sucre perlé
Accessoires
Plaque de cuisson ou plaque de cuis-
son multi-usages
Préparation
Délayer la levure dans le lait tiède. Pétrir
avec la farine, le sucre, le beurre, l'œuf,
le zeste de citron et le sel pendant
6 à 7minutes jusqu'à obtention d'une
pâte lisse.
Former une boule avec la pâte, la
mettre dans un récipient à découvert et
l'enfourner. Faire lever suivant les ré-
glages de la phase de levée1.
Avec la pâte, former 3 rouleaux de
300g et 40cm de long. Faire une
tresse avec les 3 rouleaux et la placer
sur la plaque.
Badigeonner la brioche tressée avec du
lait et parsemer d'amandes effilées et
de sucre perlé.
Programme automatique:
Lancer le programme automatique et
enfourner la brioche tressée.
Réglages manuels:
Faire lever suivant les réglages de la
phase de levée2. Cuire ensuite la
brioche tressée.
