200ml witte wijn
800ml runderbouillon
1eetlepel braadvochtpasta
30g rozemarijn
30g salie
30g tijm
Voor het bestrooien
1eetlepel peterselie | gehakt
1citroen, onbehandeld | alleen de schil
| geraspt

Braadslede met deksel
Bereiding
Start het automatische programma of
verwarm de oven voor volgens stap 1.
Giet olie in de braadslede. Voeg groen-
te, knoflook en tomatenpuree toe.
Schuif de braadslede in de oven en laat
deze volgens stap2 stoven.
Kruid de kalfsschenkel met zout en pe-
per en rol deze door het meel. Verwarm
boterolie in een pan en braad de kalfs-
schenkel aan beide kanten 3–4minuten
aan.
Voeg kalfsschenkel, witte wijn, runder-
bouillon, braadvochtpasta en kruiden
toe aan de groente in de braadslede.
Laat het geheel met deksel volgens
stap3 smoren.
Serveer de kalfsschenkel met saus, ci-
troenschil en peterselie.
