Endives au jambon
Temps de préparation: 55minutes
Pour 4 personnes
Pour les endives
8endives
50g de beurre
5c.àc. de sucre
Sel
Poivre
8 tranches de jambon cuit (3 à 4mm
d'épaisseur)
Pour la sauce au fromage
30g de beurre
40g de farine de blé type 45
750ml de lait (1,5% de MG)
250g de fromage râpé
1 jaune d’œuf (calibre M)
Noix de muscade
Sel
Poivre
Un peu de jus de citron

Préparation
Retirer le trognon dur et amer des en-
dives.
Faire fondre le beurre dans une poêle.
Faire revenir les endives. Ensuite, les
étuver à feu doux pendant 25minutes.
Sucrer, saler et poivrer.
Enrouler chaque endive dans une
tranche de jambon. Les disposer les
unes à côté des autres dans un plat à
gratin.
Pour la sauce au fromage, faire fondre
du beurre dans une casserole. Incorpo-
rer la farine, remuer et faire légèrement
dorer. Ajouter le lait en remuant vigou-
reusement, porter à ébullition et incor-
porer la moitié du fromage, le jaune
d'œuf, la noix de muscade, le sel, le
poivre et le jus de citron.
Verser la sauce au fromage sur les en-
dives et parsemer avec le reste de fro-
mage.
Enfourner le gratin d'endives sur la
grille et faire cuire jusqu'à l'obtention
d'une couleur bien dorée.
