100g pittige kaas (Gruyère) | geraspt

Bereiding
Smelt de boter. Voeg meel toe. Voeg de
melk toe en blijf roeren. Laat het geheel
koken, zodat er een zeer dikke becha-
melsaus ontstaat.
Blijf roeren en laat de saus enkeleminu-
ten indikken. Roer de kaas erdoorheen.
Vet de soufflévorm in. Scheid de eieren
en klop het eiwit stijf.
Start het automatische programma of
verwarm de oven voor.
Roer het eigeel door de iets afgekoelde
bechamel-kaassaus. Schep het geklop-
te eiwit er voorzichtig doorheen. Breng
op smaak met peper en zout.
Vul de massa in de soufflévorm. Schuif
het op een universele bakplaat in de
oven en vul ongeveer 1l (2l) water in
de universele bakplaat.
