30g boter
40g tarwebloem, type405
750ml melk, 1,5%vet
250g kaas, geraspt
1ei, grootteM | alleen de dooier
Nootmuskaat
Zout
Peper
1scheutje citroensap

Ovenschaal

Bereiding
Verwijder het harde, bittere gedeelte
van het witloof.
Smelt de boter in een pan. Bak het wit-
loof goudbruin. Laat het witloof vervol-
gens 25minuten op laag vuur stomen.
Breng op smaak met suiker, peper en
zout.
Wikkel de stronken witloof in de plak-
ken gekookte ham. Leg die naast elkaar
in een ovenschaal.
Smelt de boter voor de kaassaus in een
pan. Roer het meel erdoor en bak het
kort. Voeg al roerend de melk toe en
breng het geheel aan de kook. Roer de
helft van de kaas, de eidooier, de noot-
muskaat, het zout, de peper en het ci-
troensap erdoor.
Giet de kaassaus over het witloof. Be-
strooi het geheel met de resterende
kaas.
Zet het gegratineerde witloof in de oven
en bak het goudbruin.
