Moussaka met courgettes
Bereidingstijd: 70–80minuten
voor 4–6 porties
Ingrediënten
2½ eetlepel olijfolie
5 grote courgettes
1 grote ui
2 paprika's
1 knoflookteentje
1 blik hele tomaten (400g)
2 eetlepels tomatenpuree
35g gehakte munt
Zout
Peper
150g Zwitserse kaas, in plakken (bij-
voorbeeld gruyère)
3 volle eetlepels meel
500g natuurlijke yoghurt
2 eieren
180g kaas, geraspt

Ovenschaal
Bereiding
Schil de uien en pel de knoflook. Hal-
veer de uien en snijd ze in schijfjes. Hak
de knoflook fijn. Snijd de courgettes in
de lengte in plakken. Verwijder de pitten
uit de paprika en snijd de paprika in fij-
ne reepjes.
Verhit wat olie in een pan. Bak de cour-
getteschijfjes een voor een goudbruin
en zet ze apart.
Bak de ui, de knoflook en de paprika-
reepjes in dezelfde pan gedurende cir-
ca4 minuten. Voeg de tomaten, de to-
matenpuree en de munt toe. Breng op
smaak met peper en zout.
Vet de ovenschaal in. Leg de helft van
de courgetteschijfjes op de bodem van
de schaal. Giet de helft van de toma-
tensaus erover. Leg de plakken kaas er-
op. Verdeel de rest van de tomatensaus
erover en verdeel ten slotte de resteren-
de courgetteschijfjes erover.
Meng het meel, de yoghurt, de eieren
en de geraspte kaas en giet het meng-
sel over de moussaka. Bereid het ge-
recht.
