Pompoensoep
Totale bereidingstijd: 50–60 minuten
voor 6 porties
Ingrediënten
1 ui, in blokjes
1 eetlepel olie
500 g pompoenvlees, in blokjes
125 ml melk
375 ml groente- of kippenbouillon
Zout
Witte peper
1 theelepel suiker
10 g boter
1 eetlepel crème fraîche
6 eetlepels room
1 eetlepel pompoenpitten, grof gehakt
Bereiding
Doe de ui en de olie in een schaal en
stoof het geheel afgedekt gedurende
ca.4 minuten met een vermogen van
850Watt.
Voeg het pompoenvlees, de melk, de
bouillon en de kruiden toe. Dek het ge-
heel af en kook het met 850Watt gedu-
rende ca.6 minuten, gevolgd door
ca.12 minuten met 450Watt.
Pureer de soep en voeg de boter en de
crème fraîche toe.
Verdeel de soep over 6 borden. Doe in
elk bord 1 eetlepel room en wat gehak-
te pompoenpitten.
